My Cauliflower & cheese balls


1 cauliflower (1 kg)

100 g Cheddar cheese

100 g Parmesan

1/2 cup bread crumbs

3 medium eggs

1 crushed garlic clove

30 ml olive oil

½ tsp salt

½ tsp curry

½ tsp black pepper

½ tsp paprika

½ tsp oregano

1 handful fresh parsley


1. Boil the cauliflower for 7 min. Once done, let it cool and then chop it in very small pieces.

2. Preheat oven to 190 Celsius.

3. Grate the Cheddar cheese and Parmesan, chop finely the parsley and crush the garlic.

4. Line a baking sheet with parchment paper.

5. In a large bowl place the cauliflower, grated cheddar, grated Parmesan, one egg, olive oil, bread crumbs, crushed garlic, salt, pepper, curry, paprika, oregano and parsley. Mix well, shape balls from the mixture and push them with your palm to flatten them a bit.

6. Beat the two eggs and moisten the cauliflower balls in them one at a time, then coat them in bread crumbs and place the cauliflower balls on the pan with the baking sheet.

7. Bake 15 - 20 min. from each side or until golden brown.

Serve with sweet chili sauce (optional).
